A new set of “Starred Dinner”- events of haute cusine at Hostaria gourmet restaurant

Four dinner-events of haute national and international cuisine with great Michelin starred chefs,
within the magical atmosphere of Hostaria restaurant at Relais San Lorenzo.

Thibaut Gamba (French, one Michelin star)

Relais San Lorenzo Thirty-two years old from the Vosges (with remote Italian and from Bergamo origins), Thibaut Gamba has all the cards to become one of the greatest chef in France in the coming years. After wandered in the kitchens of the caliber of Lasserre and Gagnaire in Paris, Thibaut attended New York (Thomas Keller at Per Se), than moved to Norway at Lysverket, in Bergen. Last year he returned with the new task, Executive chef de La Table, the restaurant of the Clarance Hotel in Lille, which immediately received the Michelin star. His kitchen has great personality and pleasant sensations to the palate, able to tell indistinctly the products of the hearth and those of the sea, giving the different suggestions gathered in his professional experiences between diverse suggestions, between France, United Sates and Norway.

Edwin Vinke (Dutch, two Michelin stars)

Relais San Lorenzo Dutch chef two Michelin stars Edwin Vinke, of the De Kromme Watergang restaurant in Hoofdplaat, declares: “People often ask me what it means to cook, and I always reply that it is something very deep, that comes from the heart”. Edwin Vinke is one of the best representatives of the Zeeland cuisine, the most Western region of The Netherlands, where dishes often speak the language of the North Sea, with oysters, seafood and shellfish. A raw material always of the highest quality, interpreted using herbs and vegetables coming from the large vegetable garden that is right in front of the restaurant and Edwin Vinke scrupulously takes care by himself. His restaurant is a treasure chest of modern elegance, a little rock, with contemporary paintings and a selection of records to listen to in a pleasant area, which also a bar, where you can relax before or after dinner.

Eric Vildgaard (Danish, one Michelin star)

Relais San Lorenzo The first appointment of 2019 will be with the Michelin start chef Eric Vildgaard who got the Michelin star in Copenhagen last year, just eight month after the opening of his restaurant Jordnær at Gentofte, a small suburban village in the Danish capital. Thirty-five years old, Eric Vildgaard is a significant example of the path taken in these times by Nordic cuisine, increasingly influenced by global products and ideas, while continuing to maintain a strong link with their roots, and therefore with the Scandinavian nature. An ambitious restaurant despite the name given: Jordnær, infact, in Danish is translated more or less “with the feet on the ground”. In his professional past there are significant experiences at the famous Noma of Rene Redzepi and at Almanak.

Henrique Sa Pessoa (Potuguese, one Michelin star)

Relais San Lorenzo The Chef Henrique Sa Pessoa (one Michelin star) is one of the champions of the Lusitanian cuisine. A media chef and star in Portugal, including cook-books and participations in television programs, in recent years he has been able, along with some of his colleagues, to reinvent the world of Portuguese haute cuisine. First making its Panorama restaurant of the Sheraton Hotel, and then moving with Alma, its most prestigious address in the refined Chiado district, in Lisbon, where you can discover dishes of taste and great creativity. Its signature cuisine brings together most of the Portuguese tradition, but also Asian and international influences. The Michelin star is pinned on the Chef’s jacket from two years.

'Venetian Works of Defence between the 16th and 17th Centuries: Stato de Terra – Stato de Mar (Croatia, Italy, Montenegro)


Relais San Lorenzo This property consists of 15 components of defence works in Italy, Croatia and Montenegro, spanning more than 1,000 kilometres between the Lombard region of Italy and the eastern Adriatic Coast. The fortifications throughout the Stato da Terra protected the Republic of Venice from other European powers to the northwest and those of the Stato da Mar protected the sea routes and ports in the Adriatic Sea to the Levant. They were necessary to support the expansion and authority of the Serenissima. The introduction of gunpowder led to significant shifts in military techniques and architecture that are reflected in the design of so-called alla modernaI bastioned, fortifications, which were to spread throughout Europe.' A starred cuisine proposed by a young chef who worked with Peter Goossens at Hof Van Cleve (50 Best 50's restaurant) where he learned the taste for precision and elegance of the dish combined with ultimate research of the raw material. Michael Vrijmoed always puts a sensible and delicate touch in his preparations, exalting primary flavors, on the one side, of vegetables and products of the Flanders; on the other, of meat and fish that come from the best – not only local – producers.

Smart and offbeat, Sven Erik is able to put together a curious mix of opposite styles. On the one hand, the precision, the classicism and the Frenchisms that have been experienced over the years spent in the sphere of the Bocuse d'Or; on the other hand, a more contemporary and rock attitude, creating surprising mixtures. It's no coincidence that in Stavanger, Sven Erik also opened a bistro and a pizzeria in addition to his Michelin starred gourmet restaurant.

The young Swedish cook Titti Qvarnström, the only female starred chef in Sweden and talented representative of different cooking styles, is inspired by what the region offers and moves towards creative innovations using high quality products from oysters to truffles. Titti Qvarnström is preparing for a new adventure in the new Allium restaurant, in Malmoe, after the experience at the starred Bloom in The Park.

Born in the province of Varese in 1982, his first professional experiences have been in well-established restaurants within the Como area, up to the most significant step of his path, the experience in 2005 at 'Alle Calandre' di Sarmeola di Rubano (Alajmo brothers). In 2007 he came as a sous-chef to his current restaurant, the Conca Bella Restaurant, where in 2012 he became chef of cuisine.

Originally from Vico Equense on the Sorrento coast, land of great chefs, Domenico Iavarone has the Mediterranean Sea in his blood: fish is the king of his cooking philosophy, designed for true gourmet connaisseurs. His creations are the result of the Campanian traditional cuisine mixed up with modern techniques and aestethics. The freshness of the ingredients and the flavours of the south of Italy characterize the entire tasting experience.
